Sausage and Chicken Gumbo 1 pint (seasonal)
being raised in Houston, we had Gumbo almost as much as we had Chili...especially since it was my Mimi's favourite to make and to eat.
most of the time it was chicken and sausage; however, it was also pretty common for her to throw in shrimp and a few blue crab too!
ours is a Cajun classic chock full of tender chicken, our 100% beef sausage, tomatoes, okra, and of course the 'trinity' celery, bell peppers and onions!
